Gluten-free isn’t enough. Yes, it takes a lot of crap out of your diet, but it does little to heal the system. Enter the genius that is Sally Fallon and Nourishing Traditions. She advocates lots of bone broths and soups. The collagen and gelatin from the bones coat the intestines and restore health.
Below is my take on the idea of bone broths.
No rice because we are reducing grains, but if you do add it, add more water, and then more salt. Salt is good for stress and healing adrenal fatigue, so don’t fret about using it. If you are stressed out, chances are, your adrenal glands are in shambles.
3 of the 4 members of the estate are under the weather, so some chicken soup was in order.
Mr. Moose has a double ear infection, and we don’t advocate the antibiotics here at the estate. Since 90% of ear infections are viral, and antibiotics do nothing for viral infections. It’s high time to bring out the “poor man’s penicillin”, good ol’ chicken soup.
C A R A M E L I Z E D C H I C K E N S O U P R E C I P E
I n g r e d i e n t s
6 cups of water
Pink Sea Salt {about ten turns with my salt grinder}
3 ribs of celery {diced}
1 medium onion {diced}
3 carrots {diced}
5 free-range organic chicken drumsticks {leave skin on!}
1 T. Bragg’s Apple Cider Vinegar *{read why below}
1 T. of ghee (secret ingredient}**{again read on below}
1.) Caramelize onions in ghee. Add celery and carrot and let them cook for a few minutes.
2.) Add water and salt.
3.) Add drumsticks.
4.) Add vinegar.
5.) Cook on medium for an hour and a half, and then simmer for up to 24 hours.
*Why add Apple Cider Vinegar? First, it draws out the good minerals in the chicken bones into the soup. From all I’ve read, it’s plain good for digestion when taken raw, but since I cooked in this case, I trust it did a number on the bones.
**Ghee is healing to the gut and tastes like caramel. We all need to work on our stomachs given the amount of stress we are under be it from our jobs, modern life, or families. Your stomach’s health controls your whole body. Ghee’s allowed for those on casein-free diets, as it is pure butter-fat. Contrary to the media’s take on butter, it is good for you. A little goes a LONG way.
This soup is beyond good.
I plan to puree the meat and veggies for the kids into a dip. I pray they’ll drink the buttery broth, but I won’t get my hopes up. If not, I will get my sneak on.
Make a pot a week to keep those medical bills low{given that fall and winter are not too far}.

I will have to try ghee again. I once made it but I still had dairy reaction symptoms. I will have to buy it and try again.

This soup was so delicious! My husband doesn’t like chicken soup (crazy, I know) and so when I told him what we were having for dinner he groaned. I pureed the broth and added the chicken back in afterwards along with some GF noodles. Everyone in our family, my husband too, had multiple servings and want me to make this again!
