Summertime Pudding Recipe

So good, we eat it for breakfast on many a morning since Moose’s coconut sensitivity started.   This would pack well for a picnics {because it’s dairy-free} or a simple dessert for a evening at home.

{Don’t you just love my vintage Snoopy spoon from when I was a toddler? The boys now use it}

You could even make it into a “yogurt” by tossing a few capsules of your favorite probiotic powder.  I add saccharomyces boulardii and a heavy dose of the lacto family into ours.

Your unsuspecting children will be none the wiser.

I n g r e d i e n t s
-2 bananas with spots {these make the bananas more digestible}
-1/2 bag of frozen strawberries {I buy Trader Joe’s organic, only $1.99!}
-1 avocado

1.) Toss all these babies in a food processor.
2.) Process until creamy.
3.) {add your probiotics if you want to make it a dairy-free “yogurt”}

This was such a hit that Monkey insisted on licking the food processor bowl.

To your health…

    Just found your blog, and am very inspired. Not dealing with autism over here but other minor health issues… I love your recipes and will be trying this one very soon! Thanks for sharing and bless you :) – Sally
