After many failed gluten-free waffle experiments, I started to play around with grain-free recipes.
This, my friends, is where it’s at. Decadent. Cooks in under four minutes. Minimal prep and clean-up.
I have happily made coconut flour and almond flour waffle recipes that have come out amazing.
A L M O N D F L O U R W A F F L E S
I n g r e d i e n t s
3 eggs {organic or if you are a real foodie, pastured}
1/2 tsp of aluminum-free baking soda
1 T of melted ghee or coconut oil {gotta get the good fat in, people!}
1/2 cup of almond meal or flour {I bought mine at Trader Joe’s, but you could easily make your own}
1 tsp of vanilla
D i r e c t i o n s
1.) Beat eggs and whisk in vanilla and your choice of fat {I use ghee}.
2.) Combine almond meal and baking soda.
3.) Add wet to dry.
4.) Add to your preheated waffle iron.
5.) It takes about three-four minutes to cook. You usually know when the waffles are near done when the waffle iron stops smoking.
We’ve had these a half dozen times already. These almond-flour waffles are to die for and are waist-line friendly.
Regular wheat-flour ladened waffles will spike your blood sugar and leave you hungry an hour later. Wheat is inflammatory too, so even if you are not gluten-free, consider adding almond flour into your pantry.
Your bikini will thank you.
With the almond flour, you’ll get all the good fat and protein you need to start your day.
Make a huge batch and freeze ahead. Or even make the batter the night before.
This recipe makes three waffles.
