Guiltless Frosting {raw, gluten, dairy, soy, and sugar free}

Have your cupcake without the guilt and sugar crash.

Best of all?

It doesn’t suck. It doesn’t come from a can.

It’s so good, you be back for seconds without the guilt.

Here’s a frosting that won’t make you or the kids bounce off wall from high-fructose corn crap and colorings that have warning labels in Europe. True. Look at the Lancet study. The UK puts warning labels on all foods with petrochemical food coloring…why not the old USA?

Sigh.

I’ve adapted this from the raw foodies. They know a thing or two about healthy eating.

Step away from the food coloring people.

I n g r e d i e n t s

-1 cup of cashews
- 3 tsp of coconut oil
- 4 pitted dates
- 1 T of vanilla extract
- 1/2 coconut milk {I use So Delicious Coconut Milk found at Whole Foods}

D i r e c t i o n s

1.) If at all possible, soak the cashews and dates before using.  For a few hours.  It makes them easier to digest.  I did it for four hours, but if not, no worries.

2.) Bust out the food processor.  Dump the ingredients in.  Blend until creamy and smooth.

3.) Frost my coconut-carrot muffins with them.  Voila! Now they are magically cupcakes! {which are low glycemic, FYI}

Enjoy a decadent treat without all the garbage in regular desserts.  I’m trying to remove as much sugar from our diets as possible. Sugar is sweet, but sugar feeds cancer. Sugar makes me break out like a teenager in love.

True story.  That’s a whole other blog post.

    You are a genius. I love ideas like this! My honey usually asks me if I followed a recipe or if this is one of my it’s-a-muffin/cookie/cupcake-packed-with-nutrition made up ideas. Now I can say “It’s a recipe!” :-)

    And really — is there anything that cannot be solved with the addition of some coconut milk? YUM!

  5. Look delicious! I want you to come spend a week with me and show me all thing I should be buying, cooking and eating! I have the best of intentions when it comes to eating whole but it’s so damn hard when you’re surrounded by junk and people who love to eat it.

    PS: my friend has *extreme* reactions to red dye #40. I mean a “running full speed to the nearest potty” type of reaction. It’s bad.
