Monkey Chips {Eat Well}

Rather than gorging yourself on ice cream when that time of the month arrives, give this dessert a whirl.

Being gluten-free doesn’t have to mean the death of dessert.  This would be a good alternative for all to have in their sweet tooth arsenal.

So simple, you’ll kick yourself for not having a batch in your freezer at all times.

I n g r e d i e n t s

-bananas
-Enjoy Life chocolate chips *see footnote
-a 3 year old who likes to “help”
-freezer paper and cookie sheets
-a freezer

D i r e c t i o n s
1.) First, slice up your bananas.  Then, reprimand your three year old to get his hand out of the bag of chocolate chips.
2.) Melt the chocolate chips in the microwave, because even though you own a double boiler, it’s in the basement pantry and you are too lazy to get it.
3.) Arrange your freezer paper on your cookies sheets.
4.) Dip the slices in the melted chocolate heaven.  Turn your head for a second and realize that your 3 year old swiped your first three pieces when the phone rang.

5.) Move operations out of reach of children.
6.) After all is dipped and done, move them to a freezer.

Enjoy.  Seriously.  Frozen bananas are like ice cream.  With far less calories.

My deepest apologies for the craptastic iphone photos.  Uncle Sam is buying me a DLSR for Mother’s Day this year. Until then, my caustic wit and gritty photos will make do, right?

Now, go make some monkey chips.  Chances are you have a bag of chocolate chips, a freezer, and a few bananas. But hopefully, not a chocoholic 3 year old who spreads chocolate on your sofa.

*Why Enjoy Life Chocolate Chips?  They are the only soy-free ones on the market.  Even the expensive chocolates {Godiva, etc} are made with soy lecithin, which is an emulsifier made from soybeans.  Moosey reacts to soy and so do I.  $3.99 for a bag.  Ouch.


But… these are the best chocolate chips I’ve ever used.  They are pricey, but worth it.  {No, I didn’t get paid to say this, I just adore this company because they focus on allergy-free snacks for kids and they are located out of a suburb here in Chicago}
